Makin’ Simple Fall Mini pumpkin pies


A Simply Mommy  Recipe.. A Very simple little fall treat. Mine are a little ugly, this is my first batch.. but they tasted soooo. good. So lets get started..

First Preheat Oven to 375 Degree’s. (I use a convection oven and I keep the temp. the same but the cooking time will be less if using a convection oven.) And fetch your needed items. Muffin tins, measuring cups and spoons, large spoon for stirring, hand held mixer and I timer.

Prep time about 10 min.

Cook time 30 min. or less if using a convection oven.

1 can of  Organic Pumpkin ( Large)

1/2 cup of flour Self rising.. Please don’t use bisquick.. bisquick is the devil… lol

3/4 cup of  sugar

1 tsp. pure vanilla extract

2 tsp. pumpkin spice

1/4 tsp nutmeg

3 small eggs for richer version. You can just use 2.

3/4 cups evaporated milk

Mix until smooth.. with a spoon not a mixer.

2 pre made pie shells rolled in grocery section

Muffin Pans sprayed with a natural spray. no pam please.. use canola or other natural spray.

First roll out pie shells on floured surface this should be simple but I let mine sit out and rest from the fridge for about 5-6 min. It just makes it more pliable .Using a wide mouth mason jar lid to cut “perfect” lol circles from the pie crusts. Then place in muffin tin and shape. Using a fork to dab holes in the bottoms of the tiny pie shells.. see isn’t this fun?


Now fill each shell with the yummy mix you have created. I use around 1/4 cup in each..

Now bake them 30 min. or until brown and firm the edges start to pull away from tin. When I cooled mine about 15 min they just literally fell out of the pan easily.(Again if you are using a convection oven the cooking time will be decreased. It almost cuts cooking time in half. Just keep an eye out )

.. MMMM they should be smelling great by 15 min even in a regular oven.


I despise cool whip. So I make my own whip topping and it is pretty easy.

I store it in a … you guessed it wide mouth mason jar.

Whip Topping

1 cup heavy whipping cream

1/4 cup  sugar ..

1/4 tsp. vanilla pure please

whip with a hand held mixer and boom.. awesome whipped topping..


But I like to Drop a scoop of Vanilla Bean Ice cream beside these little yummies.. Ding okay done.. mmm… soooo good and easy .
